Remember the honey cake I talked about a while ago? This cake has no sugar, it’s naturally sweetened with honey and tastes like Christmas! It’s a perfect healthy, low calorie holiday treat!
Ingredients:
1/3 cup of raisins
4 tablespoons of candied orange peel pieces (Click here for picture)
1 1/2 cups of whole wheat flour
3 eggs (separate the egg whites and egg yolks)
50 g of butter
1 cup of honey
1/2 cup of strong coffee
1 1/2 cups of quick oats
2 tablespoons of baking powder
2 tablespoons of “Christmas spices” (Cinnamon, cardamom, clover ..)
Instructions:
1.) Put the raisins and candied orange peel pieces into a small bowl along with one tablespoon of flour and mix well.
2.) In a separate bowl, stir the butter, sugar and egg yolks together. After it’s all mixed together, add the honey and coffee and then continue mixing it. Then, put the oats, flour, baking powder and spices in the bowl and stir it all together.
3.) Now, in another separate bowl, beat the egg whites. Once your done with that, add the beaten egg whites and the raisins & candied orange peel pieces (that are covered in flour) to your dough mixture and mix it well.
4.) Pour the dough into your baking form of choice and make sure its spread out evenly.
5.) Once your oven is pre-heated at 320°f (160°c), let it bake for about 50 to 60 minutes.
(Makes about 22 servings, depending on how thick each serving is.)

WOW. this is nothing short of delicious. I think this has to be my next baking endeavor, for real! I love all things seasonally spiced! :) We don't start the Christmas shenanigans till Advent starts - so the fun for us begins tomorrow! hope your weekend is fantastic so far!
