On Friday, I got home from school earlier than usual because a teacher was sick. Once I got home, I was in the mood to do some experimenting in the kitchen and came up with protein granola! I made 3 batches so far, and ate them all because I just couldn’t get enough!
Protein Granola (1 Serving)
Ingredients:
- 1/3 cup quick oats
- 3 tablespoons rolled oats
- 1 teaspoon flaxseed (optional)
- 2 tablespoons puffed amaranth (optional)
- 1/2 teaspoon cinnamon
- Stevia OR 1 teaspoon sugar/honey
- 1 teaspoon chopped nuts (optional)
- 2 egg whites
Instructions:
1.) Preheat your oven to 375°F (190°C). Put some baking paper on a cookie sheet.
2.) Put all the DRY ingredients into a small bowl.
3.) Then add the two egg whites.
4.) Use a spoon or a fork to mix well.
5.) Put your mixture onto the cookie sheet, that is covered with baking paper.
6.) This is the messy part. Use your hands to crumble up the mixture evenly on the baking paper. Crumble up the big pieces into smaller pieces.
7.) Put it in the oven and let it bake for 20 min. When the time is up, let the granola cool on the baking paper before putting into a container.

This looks perfect! I <3 granola as is as a go to snack. I also like it with fresh berries and some greek yogurt.

ReplyDeleteThis protein granola looks so good! I love how there's egg whites in it, and it's basically granola clusters. Yum. I'm more of a muesli fan though.

ReplyDeleteMy favorite granola is these mini granola bars I make with peanut butter and mini chocolate chips. It's sooooo good. I try not to make them often because I cannot stop eating them. ;-)
When I do make them, I usually bring them to a party so I can share their chewy goodness.
This looks like an AWESOME recipe, Shannon! It may sound strange, but I think of granola as a not very healthy food, since there is usually a lot of sugar and even butter, but THIS looks really healthy and yummy! With just a touch of sweetener! Great job!!!

I love granola, but it's so hard to find one that has stats that I like...there's always too much sugar, too much fat, not enough protein, or the one I really love...the serving size is so minuscule that you're better off just not eating any at all! Definitely bookmarking this one to try soon!
