Today is the last day of October! I say this way to much but, where has time gone? I’ve been living under a pile of school work. Even though I’m busy, I try to eat as healthy as I can. My meals have been very simple, but delicious and nutritious.
My heart goes out to all those affected by hurricane Sandy!
I’m going to be sharing some recent eats from the past couple of days. Thanks to Jenn for hosting this fab link up!
Recent Breakfast: Oatmeal (1/2 rolled oats cooked with water & milk, cinnamon and chopped walnuts) topped with walnuts and cinnamon.
Recent Lunch: Two pieces of protein bread from Aldi topped with cream cheese and a hard boiled egg (best combo ever), baby carrots and a plain full fat yogurt topped with frozen raspberries.
Recent Lunch: Probably the simplest lunch ever: brown rice and a hard boiled egg.
Recent Dinner: Brown rice, turkey and peas. I put everything in a pan with some olive oil.
Recent Breakfast: Two pieces of protein bread from Aldi topped with natural peanut butter and organic strawberry jam. A plain, full fat yogurt with honey on the side.
Recent Lunch: Chicken, chickpeas and peas. I put them all in a pan with some olive oil.
Recent Snack: Mixed nuts. Perfect to snack on while doing school work!
I’m trying Zumba with my mom and a family friend today. I used to dance ballet when I was younger. I’m excited to see how the class goes! :)
What are some simple meals you love? Do you dance, or did you used to? Have you tried Zumba before?

Oh, let me know how Zumba goes! I've always wanted to try it! I love simple lunches like yours - brown rice and something simple like eggs or salmon are perfect for me! :) Have a great Halloween! x
ReplyDeleteShannon, everything looks tasty as always!
ReplyDeleteI've started going to Zumba classes earlier this year, and I love it! This is currently my most favorite kind of workout of all. What a party!
ReplyDeleteMy favorite simple meal is vegetable stir-fry. Just chop up all the vegetables you can find, fry them in a pan, de-frost some edamame, and serve with brown rice. I make a variation of that about once a week.
Happy Halloween!
I've been meaning to try Zumba for ages now! But I'm afraid I might embarrass myself seeing as I'm not a talented dancer at all and lack coordination ;). Hope you'll keep us updated on how your Zumba lesson went.

ReplyDeleteHave fun at Zumba! I love it, my mom.. not so much. My first time ever doing it was with my mom too, and although we're both not very coordinated, she's even worse than me. Oh well!
I always love your WIAW! Gorgeous pictures, and delicious food :D
ReplyDeleteHi Shannon! I saw that you once bought PB2. Where did you get that from? I also live in Germany and the only place I can find it is on amazon.com. Oh and thank you for your awesome blog! I love to read your posts.
ReplyDeleteHey there! Thanks for your comment. I'm so glad that you enjoy reading my blog! That means a lot to me. :)
DeleteI got PB2 from iHerb (there's a link and coupon code on the right side of my blog). iHerb ships worldwide and the shipping isnt expensive.
Have fun with Zumba. I haven't tried it yet since the class @ my gym is always full of middle-aged moms and their friends :P
